Bake one pan at a time for 15 to 17 minutes, until the edges of the cookies are lightly browned. Remove from the oven and let the cookies cool completely on the pan.

Repeat with the remaining dough. Transfer to a bowl, place plastic wrap on the surface, and refrigerate until chilled. For the filling: In the bowl of a stand mixer fitted with the paddle attachment, beat the butter with the sugar until the mixture is aerated and pale in color.

Scrape the sides and bottom of the bowl. Mix in the vanilla bean seeds, vanilla, and salts. Make sure this mixture is at room temperature.

Fold the banana-butterscotch mixture into the rest of the filling until evenly mixed. If the mixture curdles, whip it while warming the outside of the bowl gently with a hair dryer until smooth.

To assemble the cookies: Place the filling in a pastry bag fitted with a round tip. Make pairs of similar-sized cookies, then turn half of them over.

Top each filled cookie with a second cookie and press lightly to adhere. Put the cookies on a parchment-lined baking sheet and refrigerate until the filling has set, approximately 30 minutes.

To finish the cookies: Dip the top of each sandwich cookie in the melted bittersweet chocolate, and place chocolate side up on the parchment-lined pans.

Drizzle the tops with melted white chocolate. Moist and tender, with just the right amount of banana flavor, these muffins feature our whole-grain gluten-free Measure for Measure Flour.

They exemplify just how quick and easy it is to use this flour and to incorporate flavorful, whole-grain goodness into a tasty gluten-free breakfast.

Whisk together the flour, baking powder, baking soda, salt, cinnamon, sugar, and nuts. Set aside. Bake the muffins for 20 to 24 minutes, until the middle of a center muffin springs back when lightly touched.

Remove the pan from the oven, and let the muffins rest for 5 minutes before removing them from the pan.

Serve muffins warm or at room temperature. Wrap any leftovers airtight, and store at room temperature for several days; freeze for longer storage.

These tender, moist banana muffins are extra good with the addition of chocolate chips. Serve them for breakfast or a snack, and watch them disappear quicker than you can say "gluten-free banana chocolate chip muffins!

Sprinkle the tops with sparkling sugar. Bake for 18 to 22 minutes, or until the top springs back and a toothpick inserted into the center comes out clean.

Allow the muffins to cool for 10 minutes in the pan, then turn out onto a rack to cool completely. Banoffee stands for the banana-toffee flavor combination made popular by a sweet English pie of the same name.

Our toffee crunch add-in has inspired us to experiment with this duo of flavors, and this scone was one of our favorite tested recipes.

Work the butter into the dry ingredients until the mixture is unevenly crumbly. Toss in the toffee crunch until evenly distributed.

Knead the dough very gently about 10 times, just enough to bring it together, sprinkling on more flour as needed to keep the dough from sticking.

Remove the scones from the oven, and serve hot, warm, or at room temperature. When completely cool, store any leftovers well wrapped, at room temperature, for several days; freeze for longer storage.

For years we've been enjoying pumpkin cream cheese roll with our Turkey Day feast. Now you can enjoy banana cream cheese roll all year round. Prepare a jelly roll pan by lining with parchment and spritzing with cooking spray.

After separating the eggs, place the whites in the bowl of your stand mixer and whip on high speed to soft peaks.

Set aside in a clean bowl. To make the cake batter: Using a stand mixer, whip the egg yolks until thick and pale yellow, about 5 minutes on high speed.

In a separate small bowl combine the flour, salt, baking powder, and baking soda. Whisk until well combined and lump free. Gently fold in the beaten egg whites, stirring until well combined.

Take care not to deflate the batter as you fold. Pour the cake batter into the prepared pan and bake for 8 to 12 minutes.

The edges will begin to pull away from the sides of the pan, and the center will spring back when lightly pressed. Remove the cake from the oven, and lift it out of the pan by lifting the parchment paper.

Place the cake on the counter, and trim off its edges to make rolling easier. Turn the cake over and peel off the parchment paper.

Using a large, clean kitchen towel well dusted with confectioners' sugar, roll the cake up as though the towel were the filling.

Cool the cake, rolled up, for 20 to 30 minutes. While the cake is cooling, prepare the filling. Cook until the sugar dissolves and the liquid turns syrupy, stirring occasionally.

Remove from the heat and stir in the butter and rum. Allow to cool to room temperature. Beat the softened cream cheese and confectioners' sugar in a bowl until the mixture is lump-free and fluffy.

To assemble the cake: Unroll the towel and remove it. Lightly brush the cake with 2 to 3 tablespoons of the rum syrup.

Spread the cake with the filling, and re-roll. Place in the refrigerator to chill for 20 to 30 minutes. The roll can be frozen at this point for up to 3 months.

To serve, slice with a sharp serrated knife and plate with an extra drizzle of rum syrup. Refrigerate any leftover cake or syrup.

This gluten-free banana bread is just as good as the traditional version: sweet and moist. It's perfect as is, or with a smear of cream cheese.

Add the mashed banana, baking mix, baking soda, cinnamon, and nutmeg all at once, mixing until blended. Bake the bread for 45 minutes, then gently lay a piece of aluminum foil across the top, to prevent over-browning.

Continue to bake until the top springs back and a toothpick inserted into the center comes out clean or with a few wet crumbs clinging to it, an additional 20 to 25 minutes.

Run a table knife around the edges, turn it out of the pan, and cool completely on a rack. If you're a fan of chocolate-covered bananas, these cookies are right up your alley.

Dark, rich cookies filled with fresh banana slices and topped with a thick fudge frosting get baked into choco-nana perfection.

A tall glass of cold milk is mandatory! Combine the soft butter and sugar in your mixer bowl. Beat on medium speed for 2 minutes.

Beat in the egg and vanilla. In a small separate bowl, whisk together the baking soda, salt, baking powder, cocoa, and flour. Add to the wet ingredients and mix on low speed until well combined.

Allow the dough to sit for a minute while you make the fudge topping. In a microwave-safe bowl, heat the chocolate chips and condensed milk for 40 to 60 seconds.

Stir until smooth. Avoid over heating or the topping will dry out. Scoop the dough into 24 balls, each about the size of a ping pong ball.

Place the balls on the prepared baking sheets. Use your thumb to press an indentation into the center of each ball, then widen it to make a small cookie dough "nest.

Cover with two teaspoons fudge topping. Rolling the topping into a ball and flattening between your palms is a good way to get a thin layer of fudge to cover the top of the cookie.

Bake the fudge-topped cookies for 10 to 12 minutes. The fudge will sink in a bit, creating a round ring on the cookies.

Remove from the oven, and carefully transfer ot a rack. Serve barely warm or at room temperature, with ice cold milk.

From diner classic to homemade favorite, banana cream pie is an absolute standard in the world of pies.

Many shortcut versions rely on a graham cracker crust and vanilla pudding; but this, our favorite version, pairs a real pastry crust with homemade cream filling — for what we hope will be your best banana cream pie experience yet!

While it's optional, of course, freshly whipped cream is a wonderful complement to this pie. Crimp the crust, making either a flat edge with the tines of the fork, or a standup rim using your fingers.

Refrigerate the crust for 30 minutes, to relax the gluten; this will help prevent if from shrinking as it bakes.

Remove the pie from the refrigerator, and prick its bottom surface all over with a fork; this will help keep it flat. Line the crust with a piece of waxed paper or parchment a 9" parchment cake round works well , and fill with dried beans, rice, pie weights, or the oven-safe, food-safe weights of your choice.

Bake the crust for 20 minutes. Remove it from the oven, remove the weights and paper, and continue to bake for 15 to 20 minutes, until it's golden brown across the bottom.

Remove the crust from the oven, and cool it on a rack while you make the filling. To make the filling: In a medium-sized heatproof bowl, whisk together the sugar, flour, cornstarch, salt, and eggs, whisking until smooth.

Place the sliced bananas in the bottom of the pie crust. Spoon the hot pastry cream over the bananas, smooth the surface, and cover it with plastic wrap — or with the same piece of parchment you used to line the crust while it was baking.

Refrigerate the pie until it's completely cold. Give it at least 6 hours; overnight is preferable.

As the pie chills the filling will thicken and set. Prefer a graham cracker crust for your banana cream pie?

Remove the bread from the oven, and cool it on a rack. When it's completely cool, wrap it well in plastic wrap, and store it overnight before serving.

Chocolate meets banana in this version of one of the most popular breads we know. We like to make two mini loaves so one can be eaten straight away, and the other can be tucked away for later.

Pour the batter into the pan s and bake for 45 to 60 minutes bake for the shorter time for two mini loaves and the longer time for the larger loaf , until a cake tester or toothpick inserted into the center comes out clean.

Remove the bread s from the oven, and allow to rest in the pan s for 10 minutes. Turn the bread s out onto a rack to cool completely.

Who knows where the name of this fruit- and nut-rich cake comes from? Whatever its origins, this lovely dessert has been a staple at least since the '70s, when a recipe for it was printed in an edition of Southern Living Magazine.

We've changed it to use self-rising flour, and optional rum-soaked pineapple pieces and coconut flakes. Or place it in a microwave-safe dish, toss with the rum or juice, cover the dish, microwave for a minute or so, and then leave covered to cool and absorb the liquid while assembling the remaining ingredients.

Sprinkle the chopped pecans on a baking sheet, and toast for about 5 to 7 minutes, until lightly browned. Remove from the oven to cool.

Grease and flour three 9" round pans for the cake. To make the cake: Beat the eggs and oil in a large mixing bowl until foamy, about 2 minutes at medium-high speed.

Add the sugar, vanilla, and mashed bananas. In a separate bowl, whisk together the flour and spices. Add these dry ingredients to the wet ingredients, stirring to make a smooth batter.

Add the coconut and dried pineapple with any remaining rum , if you're using them. Spoon the batter into the prepared pans, spreading it to the edges.

Bake the cakes for 32 to 38 minutes, until they're golden brown, and a cake tester inserted into the center of one comes out clean.

Remove the cakes from the oven, run a thin spatula around the edges of the pans, cool for 15 minutes, then turn out onto a cooling rack. Cool completely before frosting.

To make the frosting: Combine the butter, cream cheese, and salt in a medium-sized bowl, and beat together until light and fluffy.

Beat in the pineapple juice a little at a time, until the frosting is the correct consistency for spreading.

Use only a teaspoon or so if you're not using the xanthan gum; up to 2 tablespoons, if you are. Remember, it will firm a bit more when chilled.

Place one cake layer on a serving plate. Sprinkle with toasted nuts, and refrigerate until ready to serve.

Refrigerate any leftovers. We wavered about the coconut and extra pineapple in this cake, not knowing if they were traditional; but when a casual Twitter survey came up almost evenly divided between those who think coconut is necessary and those who think it's a sad mistake, we decided to go ahead and offer both fruits as an option.

We don't usually call for a particular brand of canned fruit, but the cake was markedly better with Dole pineapple.

Even though crushed, the pieces were bigger, stayed intact, and had more pineapple flavor. To make as a layer cake, as pictured here, see the bakers' tip at the bottom of the recipe.

Lightly grease a standard muffin or cupcake pan; or line with papers, and grease the papers. Add the eggs, and beat well.

Stir in the banana, honey, and yogurt or buttermilk , and vanilla. The mixture may look lumpy or curdled. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg and Cake Enhancer.

Add half of the dry ingredients to the banana mixture and mix until combined. Scrape the bowl and add the remaining dry ingredients. Mix until the batter is uniform; scrape the bowl and mix at medium speed for 30 seconds.

Scoop the batter into the prepared pan, filling the wells almost full; a muffin scoop works well here. Bake the cupcakes for 24 to 27 minutes, until a cake tester or toothpick inserted into the center of one comes out clean, or with a few moist crumbs clinging to it.

Remove the cupcakes from the oven, and place the pan on a heatproof surface. As soon as you're able, tilt the cupcakes in the wells of the pan; this prevents their bottoms from steaming.

When the cupcakes are completely cool, make the frosting. Beat together the confectioners' sugar, peanut butter, vanilla, and salt until crumbly.

If the frosting is too thick to spread easily, add more liquid a tablespoon at a time, beating after each addition. Put the crushed peanuts in a bowl.

As you frost each cake, dip it into the crushed peanuts, turning it to cover the frosting completely. Transfer cupcakes to a rack to set briefly; then cover and store airtight until you're ready to serve them.

They'll stay fresh for a day or two; longer, if you've used Cake Enhancer. A twist on classic white sandwich bread, this loaf features fresh bananas for a slightly sweeter slice.

Excellent with peanut butter, honey or jam, the bread is also delicious with turkey, ham, and curries. French toast made with this loaf is sublime topped with warm maple syrup and diced pecans.

Knead the dough, by hand 10 minutes or by mixer 5 minutes until it's smooth. Place the dough in a lightly greased bowl, and allow it to rest for 1 hour.

To make dough in your bread machine: Place all of the ingredients into the pan of your machine, program the machine for manual or dough, and press Start.

About 10 minutes before the end of the first kneading cycle, check the dough and adjust its consistency as necessary with additional flour or water; the finished dough should be soft and supple.

Transfer the dough to a lightly oiled work surface, and shape it into a log. If the bread appears to be browning too quickly, tent it with aluminum foil for the final 10 minutes of baking.
